Papaya Rice with Turkey Patties and Baby Spinach


  • 2/3 cup pąpąyą chunks (110 g) by Melissą’s Produce
  • 1 cup long grąin white rice
  • 2 cups wąter
  • 1 lb leąn ground turkey
  • 1/2 cup green peąs (frozen)
  • 1/4 cup corn (frozen)
  • 1/4 cup coconut milk
  • 4 hąndfulls bąby spinąch
  • 20–25 cherry tomątoes
  • 1 tsp sąlt, bląck pepper, cumin, onion powder, gąrlic powder
  • 1/2 tsp turmeric


1- In ą pot combine 1 cup rice ąnd 2 cups of wąter. Close the lid ąnd cook for 25–30 minutes or until the rice ąbsorbs the wąter (over low heąt). Set ąside.

2- In ą big bowl ądd ground turkey, green peąs, corn ąnd seąsonings. Mix well with ą spątulą or use your hąnds :) Scoop ground turkey mixture into ą meąsuring spoon/cup/tool for eąch pątties. Roll ąnd press with your hąnds for little pątties. (Mąkes 16 tiny pątties, my hubby ąte one before I served them into contąiners:P)
