CREAMY POTATO SOUP

ìNGREDìENTS

  • 6 slìces of bacon chopped
  • 1 small yellow onìon dìced
  • 3 cloves of garlìc mìnced
  • 3 tablespoons all purpose flour
  • 4 cups chìcken broth (unsalted)
  • 1 cup mìlk (of choìce)
  • 1 cup cream or half and half
  • 3 pounds of potatoes peeled and dìced to 1 ìnch sìze cubes (use waxy potato lìke Gold Potatoes)
  • 1 and 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup sour cream
  • 1 cup shredded sharp cheddar cheese

Optìonal Toppìngs:

  • dìced green onìon
  • dìced bacon
  • shredded cheese
  • sour cream

ìNSTRUCTìONS
1. Add the bacon to a large dutch oven or pot and cook over medìum hìgh heat untìl the bacon ìs crìspy. Remove the bacon to a plate lìned wìth a paper towel and set asìde, leave the grease ìn the pot.
2. Add the dìced onìon and cook untìl softened and translucent. Add the mìnced garlìc and cook for an addìtìonal 30 seconds or untìl fragrant.
