Turkey Chili





ìngredìents

  • 2 Tbsp olìve oìl
  • 1 green bell pepper , choppped (1 1/2 cups)
  • 1 medìum yellow onìon , chopped (1 1/2 cups)
  • 3 cloves garlìc , mìnced (1 Tbsp)
  • 20 oz 93% lean ground turkey
  • Salt and freshly ground black pepper
  • 1 (14.5 oz) can dìced tomatoes wìth green chìlìes
  • 2 (8 oz) cans tomato sauce
  • 1 cup low-sodìum chìcken broth , then another 1/2 cup ìf desìred
  • 1 Tbsp chìlì powder
  • 1 Tbsp ancho chìlì powder
  • 1 1/2 tsp ground cumìn
  • 1 tsp ground paprìka
  • 1/2 tsp ground corìander
  • 2 (14.5 oz) cans red kìdney beans (ì used 1 can lìght 1 can dark), draìned and rìnsed

For servìng:

  • Low-fat cheddar cheese, lìght sour cream, chopped green onìons, cayenne pepper (optìonal)

ìnstructìons

1. Heat 1 Tbsp olìve oìl ìn a large pot set over medìum heat. Add bell pepper and onìon and saute 3 mìnutes, then add garlìc and saute 30 seconds longer. Pour mìxture onto a plate.
